Thanks for a student for not only sharing these delicious cookies but also the recipe. This was in her mother's recipe box going back to the 60's and enjoyed it throughout her childhood. She recently discovered that it was GF and wanted to share it. How cool for us!
1 c. white sugar
1 c. brown sugar
½ c. butter
1 tbsp vanilla add butter/sugar mixture add
1 ½ c. creamy peanut butter
4 ½ c. oatmeal
2 tsp baking soda
½ tsp salt
Add wet ingredients and stir well
½ c. chocolate chips
½ c. mini M&M’s
Chill overnight before baking for a more chewy texture.
Spray cookie sheets, scoop by the tablespoon and lightly flatten dough before baking. Bake at 350˚F, 10-12 minutes until edges begin to brown. Let set for 1-2 minutes, cool on racks.
